Both Rioja in downtown Denver at Larimer Square and Encore, attached to the Tattered Cover bookstore were fabulous food finds in Denver.

It was a beet carpaccio, the ring things are some tasty onion rings and the roll underneath the onion rings was proscutto wrapped around spring rings. the swirl was a mustard type sauce. this dish was great, i'm still thinking about it!
